Malting needs large volumes of clean water for its process, and classically has used around 4-4.5m3  for each tonne of malt produced; this has been reduced substantially in recent years with all maltsters working towards less water used in their steeping process and recycling of effluent where possible. In the simplest step the majority of maltsters have moved from 3 steeps to 2 in order to cut water use. More advanced technologies have also been employed such as the AMBR & RO Plant at Bairds Malt sites at Witham and Inverness Bairds – Brewing Green and the OPTISTEEP system at Boortmalt Optisteep technology | Boortmalt.
